How to Make Pine Cone Jam? A Very Healthy Recipe

Since childhood, my grandmother taught me to enjoy this beneficial delicacy during the autumn-winter season. We, the children, would take a teaspoon, and adults would take a tablespoon. Thanks to this habit, we rarely fell ill, and if we caught a cold, we would recover within a few days. Every spring, I go to the forest to collect pine cones, preparing a large batch of jam because I truly want to maintain good health and avoid falling sick.

Today, I will share a recipe for pine cone jam. This jam strengthens the immune system, helps the body fight respiratory infections, and restores lost energy. It is not only a delicious treat but also a natural remedy that has been used for generations.
For preventive purposes, take one tablespoon of the jam once a day (children take one teaspoon) 20 minutes before breakfast. During illness, take one tablespoon three times a day until full recovery. In cases of fatigue, exhaustion, or general weakness, you can add the jam to tea instead of sugar for added benefit.
However, pine cone jam is not recommended for people with chronic kidney, liver, or gallbladder diseases, pregnant women, and children under six years of age.
When to Collect Pine Cones
Pine cones should be collected in the spring, starting from March 20, and no later than June 21, before the summer heat intensifies. The best time for harvest is in early to mid-May. Young, fully green cones are ideal—they should be no longer than 4 cm. They must be processed on the day they are harvested; otherwise, they darken and spoil.
Before cooking, rinse the cones thoroughly under running water to remove dust and impurities. You can use any suitable container for preparation, but maintain a low temperature (80–90°C), as high heat will cause the cones to open and lose their flavor. From 2 kg of pine cones, you will get approximately 1.5–2 liters of the finished product.
Ingredients:
80 young pine cones (approximately 800 g)
1.5–2 liters of water
1–1.5 kg of sugar
Preparation:
Wash the pine cones and fully immerse them in water in a container large enough to cover them completely.
Boil the pine cones in water for 40 minutes, then leave them to steep for 10–12 hours. This step is essential to determine how much sugar is needed. Do not discard the pine cones after straining.
Making the Jam:
Take one cup of the pine cone infusion and add one cup of sugar.
Boil the mixture into a syrup for about one and a half hours.
Twenty minutes before the jam is ready, add the pine cones (8–12 cones per half-liter jar).
Pour the finished jam into clean, sterilized jars and seal with lids.
The jam has a sweet and slightly sour taste, reminiscent of honey, combined with the bright, fresh flavor and aroma of pine. If you do not have time to make the jam, you can cut fresh pine cones in half and cover them with honey. Acacia or linden honey works best. Place the jar on a windowsill but avoid direct sunlight. Stir the syrup daily, and it will be ready in 2–3 months. Afterward, strain the liquid. Store the resulting syrup in the refrigerator and use as needed.
